He visited England, Ireland, even Iceland, traveled to nearby Spain and Portugal and traded along the Western African coast during his trips. Italian cuisine has always been known for its garlic, its olive oil, its tomatoes, its weakness for wine, and for that uncanny way it had of defying the rules: the more you eat the healthier you are. Well, the real lesson Italian cuisine taught the world is a simple one: it’s all about what you eat and the quality of the ingredients you use. Olive oil is not just oil. Tomatoes must be fresh.

    The cuisine of Puglia and Southern Italy is very different from the Northern Italian cuisine.. It is not only very tasty but also one of the healthiest food in the world.. It is a very balanced way of eating. At all meals a combination of GOOD CARBS, GOOD FATS (only EVOO), GOOD PROTEINS (mainly legumes and seafood and very little red meat) and lots of vegetables are eaten. Italian food is a surprisingly diverse cuisine. Each of the twenty Italian regions has a distinctive set of flavors, recipes, products, and ingredients. In fact, the Italian regions were not officially united as a nation until the midth century; therefore, each individual region has retained much of its exclusive identity.
